Slow cooking is the essence of winter cooking.  During a day of drinking mulled wine by the fire we will delve deeply into the art of the braise slowly simmering ribs, briskets, shoulders and hocks into melting submission and not to be outdone in the vegetable department we will dig and pluck from the garden to combine with local grains and our own dried beans to slowly simmer until everything is mouthwateringly tender.
